Happy St. Patrick's Day

by Erica on March 17, 2010

I know it’s a little late in the day (with only a few minutes left,) but I felt the need to get back into frequently posting again and say Happy St. Patrick’s Day.  I’ve gotten into the habit of getting out of the habit of posting everyday, so I will get out of that habit.  Hah!  If that made any sense!

I normally don’t celebrate St. Patrick’s day all that often, but this year, I had a big dinner and we even made dessert to top it all off.  After not really planning anything, I had to figure out what I was going to do, and fast, but luckily, I had all the ingredients on hand to make chili and cornbread.

Yeah, same old chili and cornbread, but not today.  Instead of just making the same old, I turned our homemade chili into Clover Chili.  It probably sounds weird, and my husband certainly wasn’t that enthused about having green stuff in his chili, but he was pleasantly surprised with the outcome.

Adding some peas, and broccoli really made a difference, and made me feel better about having only chili and cornbread for dinner.  Not only did I take the chili to another level, I follow HappyBabyFoods on twitter, and they released a great link on how to make some green cornbread that would be perfect for St. Patrick’s day.  I happened to have the ingredients on hand, and was glad that I did.

Here’s what dinner looked like:IMG_0908

Then dessert:IMG_0951

Dessert was chocolate covered strawberries and a milkshake, but not just ANY milkshake, a GUINNESS milk shake.  I don’t drink often, nor have stuff like this that often, but if you ever go to the Alamo Drafthouse in Austin, this is the ONE thing you MUST get when you’re enjoying a movie.  It is so good, you forget that you’re drinking something with such a heavy beer.

I don’t really feel like getting all wordy, and crafting a huge post that will only bore you until you fall asleep at your computer, but I have to ask: What did you do for this St. Patrick’s day?  Are you still celebrating?  Do you have any St. Patty traditions?  Since our celebration was so much fun and so tasty, I might make it our tradition.

If you’re interested in the recipes for any of the pictures above, I only have the recipe for the cornbread and the shake, and I always wing it with the chili.  I am, however, willing to share my method, if you’re interested.

Happy St. Patrick’s Day!
